Pozole is a traditional Mexican soup made from hominy and meat, typically pork. It's known for its rich flavors and is often garnished with various toppings.

Ingredients
1 can of hominy
2 lbs of pork, cubed
spices:
bay leaves
oregano
chilies:
guajillo
ancho
chile de arbol
6 garlic cloves, halved
1/2 yellow onion
salt to taste
toppings can include:
shredded lettuce
thinly sliced radishes (optional)
chicaron
diced onion
queso fresco
avocado (optional, but the best part)
lime wedges
Instructions:
In a stock pot, bring pork and water to a boil. Make sure to skim off any foam that rises to the top.
Add onion, garlic, bay leaves, and salt to the stock pot. Let simmer for 1 1/2 hours.
With deseed and devein the chilies, boil them in a saucepan with water for 15 minutes.
Blend the chilies with a few cloves of garlic and the chilies cooking water.
Add a little oil to an empty saucepan and strain the blended mixture into the pan. Let simmer for 10 minutes.
Add the chilies misture and hominy to the stockpot and simmer for 30 minutes.
